Such a mooncake which is on the sweeter side and has the melt in your mouth sensation would go really well with our Hakkaisan, which is our Snow Aged sake. “Snow Aged 3 years” literally means being kept in snow and chilled solely by snow — no electricity! — for 3 years at a temperature of about 3 degrees Celsius in an insulated room known as “Yukimuro”.
